Plantation White Rum 3 Stars - Jamaica - Barbados - Trinidad is a White Rum from Jamaica. Rum is an alcohol produced from sugar cane. Sugar cane can be grown wherever these conditions are found: warmth, plenty of sunshine, rich, well-drained soil. So it's not surprising that sugar cane can be found in many parts of the world. So it's not surprising that there are almost as many origins of rum as there are sugarcane-producing countries.
There are 2 categories of rum: agricultural rum, made from vésou (the juice of the sugar cane), and rum from the sugar refinery, a molasses rum (a by-product of sugar production). Rum is made in several stages. First, the sugar cane is crushed to produce a juice (vésou), then the vésou or molasses is fermented to produce a slightly alcoholic juice (between 5° and 10°). This juice is then distilled to obtain white rum. This white rum is transformed into amber rum during ageing in wooden barrels for 1 to 2 years. An aged rum will have spent at least 3 years in casks and a "hors d'âge" will have spent at least 5 years in casks.

This rum is from the Plantation brand. Maison Ferrand is a recent arrival, having only been in existence since 1989, when it was founded by Alexandre Gabriel. The company began with cognac before expanding into gins (Gin Citadelle) and rums. Plantation rums come exclusively from the Caribbean (Barbados, Grenada, Guyana, Jamaica, Nicaragua, Panama and Trinidad). The Plantation rum collection includes limited edition vintage rums and blends. Alexandre Gabriel contacted rum producers in the Caribbean because he was supplying them with casks that had contained cognac. These encounters enabled him to discover the many facets of rum. The idea for the Rhums Plantation range grew out of these encounters. Alexandre Gabriel focuses on two particular concepts: ageing and maturation. The rums are aged in the Caribbean, but then transferred to his cellars in Charente, in the heart of Cognac country, where they are matured in French oak barrels, further enhancing the range of aromas in Plantation rums.

Plantation White Rum 3 Stars - Jamaica - Barbados - Trinidad is a molasses rum, also known as industrial rum or sugar mill rum. The distinction with an agricultural rum lies in the way in which the raw material, sugar from sugar cane, is used and in its form. Sugar cane molasses is the by-product of the cane sugar crystallisation process. Molasses is a very thick, sticky, dark brown substance. Industrial or traditional rum is called molasses because it comes from the industrial sugar production process. The liquefied sugar cane molasses (which still contains 50% of the sugar not extracted by centrifuging) is fermented for 48 to 72 hours before being distilled. However, molasses rums are not just average quality rums - you'll find some fabulous molasses rums, and it's very difficult to guess the source of the sugar (vésou or molasses) by tasting certain rums. The quality of rum cannot stop at the source of the fermented sugar; it also owes a great deal to distillation and ageing. Traditional Hispanic and British rums are most often made in whole or in part from cane sugar molasses. Sugar cane honey, also known as sugar cane syrup, is the 3rd most important source of sugar used to produce rum, the first two being molasses and vesuvius. This honey comes from sugar cane, the cane juice is extracted by grinding, then filtered and cooked in clarifiers. What is obtained after cooking is placed in evaporators to continue the process of concentration to obtain a thick, liquid golden colour resembling honey, hence the name cane honey. As required, this cane honey is extended with pure water and then fermented with yeasts specific to each distillery before being distilled.

This rum is white. White rum is drunk neat, as a ti-punch or as the base for a cocktail. There are agricultural rums made from freshly ground sugar cane juice and traditional rums made from molasses or cane honey. The rum is white (translucent) as a result of its condition after distillation, and is then left to rest in stainless steel or wooden vats, but the short contact time with the wood means that the rum does not take on the natural colouring of aged rums. This is still the case today, with the exception of Havana Club 3 Year Old White Rum, which has been aged in casks and then filtered through charcoal filters to regain its original translucent colour. All distilleries offer more or less premature white rums, vintage or not.

Jamaica has been an important place since the 18th century, due to its connection with the navy and piracy of the time. It is difficult to define a single style of Jamaican rum, as there are so many different types, from the lightest to the densest. Jamaica produces rums of world renown.
