In 1790, Antoine Leroux-Préville founded a sugar refinery called Fonds-Previle at the foot of Mount Pelée. Jean-Marie Martin bought the property in 1845 and began distilling and marketing rum using only his first name, the initials now familiar to all rum lovers. This distillery, the oldest in Martinique, was spared by the eruption of Mount Pelée in 1902. Sugar cane is grown on the estate, with three varieties dominating the plantation: blue, rosseau and red. After distillation, the rum is stored in stainless steel vats or French or American oak (ex-bourbon) barrels.

The L'Atelier des Rhums range is particularly aimed at mixologists and bartenders, offering three distinct characters: a fruity one called 'Jardin Fruité', the mineral 'Fumée volcanique', and this spicy version aged for three years in French and American bousiné oak casks. Spices take pride of place in this deep, complex agricultural rum, marked by the toasted oak cask. Aromas: nutmeg, cinnamon, ginger, vanilla, woody, toasted, peppery, chilli pepper.
