The Organic Mediterranean Gin by the Thompson brothers (Simon and Phil) is an organic gin distilled in Dornoch, Scotland. It is crafted using botanicals that evoke the Mediterranean region, including bergamot, lemon, orange, rosemary, thyme, and bay leaf. The gin is non-chill filtered to preserve its full flavor and texture.
On the nose, you'll find notes of citrus, thyme, and beeswax. There's also a subtle hint of salinity.
On the palate, this organic gin brings forth fresh herbs like rosemary, along with lemon zest and olives.
The finish reveals hints of pepper and juniper berries.
The Thompson brothers are also well-known in the community of rare whisky enthusiasts. They bottle their discoveries, and these bottles are highly sought after for their exceptional price-to-pleasure ratio. They've been distilling since 2016 in a renovated building, the former fire station adjoining the Dornoch Castle Hotel.
