Macollo 12 Year Old Black 38% Rum is an Agricole Rum from Mexico. Rum is an alcohol produced from sugar cane. Sugar cane can be grown in the right conditions: warm, sunny, rich, well-drained soil. So it's not surprising that sugar cane can be found in many parts of the world. Logically, it's no surprise that there are almost as many origins of rum as there are sugar cane-producing countries.
There are two categories of rum: agricultural rum made from vésou (the juice of the sugar cane), and rum from the sugar refinery, a molasses rum (a by-product of sugar production). Rum is produced in several stages. First, the sugar cane is crushed to produce a juice (vésou), then the vésou or molasses is fermented to produce a slightly alcoholic juice (between 5° and 10°). This juice is then distilled to obtain white rum. White rum becomes amber rum when aged in wooden barrels for 1 to 2 years. An aged rum will have aged for at least 3 years in casks and a "hors d'âge" will have spent at least 5 years ageing in casks.
Macollo 12 year old Black 38% Rum is from the Macollo brand. The Macollo distillery was founded in 1998 and prefers traditional Mexican rum-making methods. This organic rum is made from the juice of sugar cane harvested and crushed on the same day. The natural humidity of the Jalisco region, home to the town of Mazamitla, famous for its church dedicated to Saint Christopher, allows the cane juice to ferment slowly, typically over 7 days, giving these rums their fruity, floral character.

The cane wine is then distilled in a distillation column to obtain the rum, which is generally 70° proof. This Rhum Macollo 12 ans Black 38% is a cane rum. Cane rums are made from 100% sugar cane juice, known as vesou, which is crushed within 24 to 36 hours of cutting. This juice is fermented with yeast, which determines the flavour of the final rum. When the vesou is between 5 and 8° proof, depending on the distillery's choice, it is distilled. Cane rums in France are generally called rhum agricole, but this is not the case in other producing countries. Molasses or vesuvius rums are frequently used by distilleries in the final product. When you taste vesuvial rums, you'll find notes of sugarcane.
This rum is an amber rum. Amber rums are rums that have been aged in wooden casks, resulting in evaporation, concentration of flavours and an amber colour. Each distillery has its own cellar master who keeps the production process secret, giving each cuvée its own distinctive flavour and colour. An amber rum may also have been spiced.

An aged rum is one that has been aged for at least 3 years in a wooden cask, usually oak, that has already been used to age another spirit such as bourbon, cognac, whisky or muscats. This ageing time allows the rum to interact with the juices in the wood. It is this time spent in casks that gives the rum its amber, woody colour and tertiary aromas. This method of ageing has been influenced by the ancestral practices of Cognac. Old rums are classified according to age in the same way as cognac: Rhum Vieux VS, Rhum Vieux VSOP, Rhum Vieux XO and vintage old rums.
This rum comes from Mexico. People tend to associate Mexico with Mezcal or Tequila, but rum is also produced in Mexico, usually for local consumption. The sugar cane comes from the Cordoba region on the Gulf of Mexico, which enjoys a tropical climate.
