PERE LABAT BLANC 59° Rhum Agricole de Marie Galante 70 cl is a Rhum Agricole from Guadeloupe, France. Rum is an alcohol produced from sugar cane. Sugar cane is grown when the following conditions are met: warmth, plenty of sunshine and rich, well-drained soil. So it's hardly surprising that sugar cane can be found in many parts of the world. So it's not surprising that there are almost as many origins of rum as there are sugarcane-producing countries.

There are 2 categories of rum: agricultural rum, made from vésou (the juice of the sugar cane), and rum from the sugar refinery, a molasses rum (a by-product of sugar production). Rum is produced in several stages. First, the sugar cane is crushed to produce a juice (vésou), then the vésou or molasses is fermented to produce a slightly alcoholic juice (between 5° and 10°). This juice is then distilled to obtain white rum. The white rum becomes amber rum when aged in wooden barrels for 1 to 2 years. An aged rum is one that has been aged for at least 3 years in casks, and a "hors d'âge" is one that has been aged for at least 5 years in casks.

The Poisson estate has been located in Grand Bourg on Marie Galante, a small island in the south of Guadeloupe, for over 150 years. Initially, the estate housed a sugar refinery, which became a distillery in 1916. The rum from this distillery is named Père Labat after the monk who improved the stills used to make rum in the 18th century. Père Labat rum is an agricultural rum, made entirely from freshly ground sugar cane juice. White rum, golden rum, aged rum, all Père Labat rums feature in the world's top rankings. Each bottle is a true delight of authenticity.

Fermentation of this vesou produces a cane wine that is 5° proof. The cane wine is then distilled in a distillation column to produce the rum, which is usually 70° proof. PERE LABAT BLANC 59° Rhum Agricole de Marie Galante 70 cl is made from cane. Cane rums are made from 100% cane juice, known as vesou, which is crushed within 24 to 36 hours of cutting. This juice is fermented with yeast, which gives the rum its distinctive flavour. When the vesou is between 5 and 8° proof, depending on the distillery's choice, it is distilled. In France, cane rums are generally known as rhum agricole, but this is not the case elsewhere. Molasses or vesou rums are regularly used by distilleries in the final product. When you taste rums made from vesuvius, you will find notes of sugar cane.

This rum is a white rum. White rum is drunk neat, as a ti-punch or as the base for a cocktail. It can be found with agricultural rums made from freshly ground sugar cane juice and traditional rums made from molasses or cane honey. The rum is white (translucent) because of its state when it leaves the distillery, then it is left to rest in stainless steel vats or wooden vats, but the time spent in contact with the wood does not allow the rum to take on the natural colouring of aged rums. One exception is Havana Club 3 Year Old White Rum, a rum that has been aged in casks and then passed through charcoal filters to regain its original translucent state. All the distilleries offer more or less premature white rums, vintage or not.

France produces around 55 million litres of rum a year, of which 20% is consumed locally, 30% is exported around the world and 50% is consumed in mainland France. It takes 9 kg of sugar cane to produce one litre of agricultural rum.
