Le Clos des Fees by Hervé Bizeul Red Côtes du Roussillon Villages. Plots of old vines selected on clay-limestone slopes. Blend of Syrah, Mourvèdre, Grenache and Carignan. Intensive green work: disbudding, interleaving, load regulation, leaf stripping. Search for a perfect phenolic maturity, adapted to each grape variety and each terroir. Sorting at the harvest then after destemming. Storage and transport in refrigerated truck. Vinification partly in new half-muids of 5 hl, hot run off, malolactic and aging in new barrels 100%. All reassembly, racking and barreling operations are carried out manually, without pumping. Aging on lees 18 months. Not filtered. Powerful, concentrated wine, rich in taste, with an exceptional creamy texture, which nevertheless remains fresh and taut. Delicious the year after bottling, if you like young and powerful wines and if you take care to decant them. Often closes in year II. Then slowly matures and gradually acquires its mature character while retaining its fruit. Aging potential 8 to 15 years old The Clos des Fées is a plot of vines where the Fairies would live, if they existed. The place is very isolated, very beautiful, very wild, very romantic and inspired this name to Hervé Bizeul. Lost in a desert of scrubland, surrounded by dry stone walls, the Clos des Fées looks like a postcard image. Here, the vines were planted with a pickaxe, in the midst of the outcrops of source rock, in small pockets of pure clay, zigzagging in the middle of impressive holm oaks. The stones were taken out of the vines, one by one, by hand or on horseback, then patiently and skillfully stacked by generations of winemakers, hard-working and little stingy with their times. Vines with tortured arms, the village elders claim that as far back as they can remember, they have always known them as "old". In the distance, the blue cliffs of Vingrau, almost vertical, have been there for much longer, almost constantly whipped by the Tramontane. At the foot of the nearby Pyrenees, the Mediterranean sparkles. If the fairies at the Solstice still meet and dance, this is where they do it in this singular, different, mysterious place.
