The Ayala Champagne House has belonged to the Bollinger family since 2005. Since then, Hervé Augustin has been in charge, bringing a more artisanal touch to Ayala champagnes.

Description
Ayala is one of the oldest champagne houses in the region, founded in 1860 by Mr Edmon de Ayala in the village of Aÿ. This Champagne house focuses on the elegance and finesse of its champagnes, and is particularly well known for its low residual sugar content throughout its range. Ayala produces its grapes on the noble terroirs of the Montagne de Reims and the Côte des Blancs, and these grapes also come from other winegrowers carefully selected by the Champagne house.
This is of course Ayala's flagship champagne, made from 3 grape varieties: Chardonnay, Pinot Noir and Pinot Meunier. The blend gives this champagne a great deal of elegance, freshness and finesse. Ayala's brut majeur is ideal with seafood, aperitifs, fish and cheese.
