Description
Vin Jaune d'Arbois by Jacques Tissot is an emblematic Jura wine, made from the Savagnin grape variety. This dry white wine is renowned for its longevity and aromatic complexity. After vinification, the wine spends a minimum of 6 years and 3 months in casks in Jura cellars specially dedicated to Vin Jaune. This ageing period allows the wine to develop complex aromas of nuts, spices and dried fruit.
The vinification process for Vin Jaune d'Arbois begins with the harvesting of the Savagnin grapes. After fermentation, the wine is placed in oak barrels, where it ages for at least 6 years and 3 months. During this period, part of the wine evaporates, concentrating the aromas and flavours. The veil of yeast that forms on the surface of the wine protects it from oxidation and contributes to its unique flavour.
The colour is a beautiful, intense golden yellow. We are immediately won over and impressed by the aromatic power of the nose, which leads us to notes of walnuts, almonds, hazelnuts, caramel and spices. The palate is full and powerful, with aromas of fresh walnuts, curry, nutmeg and great persistence. The finish is long and complex, revealing all the richness of ageing.
Vin Jaune d'Arbois is an ideal companion for poultry dishes, such as chicken in cream sauce with morel mushrooms, as well as fish dishes in sauce, such as pike in beurre blanc. It also goes well with hard cheeses such as Comté, and exotic and spicy dishes, thanks to its notes of curry and nutmeg.
