Description
A 100% Pinot Noir Grand Cru Champagne from vines of Clos Les Chaudes Terres and Clos St Jacques in the village of Aÿ.
This Bollinger cuvée les Vieilles Vignes Françaises is from ungrafted vines, these vines are pre-phylloxera vines. This is extremely rare. These vines were planted then multiplied by the provignage technique which consists of burying vine branches so that they take root without being separated from the mother plant.
Tasting this champagne is like tasting a part of the history of champagne.
The color is a beautiful intense gold. the nose evokes fruits such as mirabelle plums and quince and candied lemon. Then notes of hazelnuts and fresh walnuts appear and finally notes of vanilla and caramel; the nose is very complex. the palate is fresh and ample, the fruit notes are confirmed as well as the notes of vanilla and caramel. the finish is super long and slightly saline.
