La Bière Gôde, a brut traditional method beer, halfway between champagne and beer.
Description
The creator of this Gôde beer is Godefroy BAIJOT, who worked for his family's champagne house, Besserat de Bellefon, for nearly 10 years.
It was in October 2021 that he decided to embark on this adventure: the creation of a traditional method Brut beer, halfway between champagne and beer.
With his brewer's certificate in hand, he set up his brewery in GODEWARESVELDE, in the heart of French Flanders.
The results are very interesting.
A very precise process lasting several months was needed to combine the Brewing and the ‘Traditional Method’, which took place in 2 stages: the Brewing stage and the Traditional Method stage.
The Brewing is carried out in a very traditional way, with the greatest respect for the rules in force. The next stage is more original, as it is carried out as if we were trying to create a sparkling wine. When the beer is bottled, a tirage liqueur and yeast are added. This second fermentation in the bottle is the equivalent of the head fermentation of a Méthode Traditionnelle. The bottles are then left to rest for 6 months on laths like a champagne or crémant.
At the end of the 6-month resting period, the bottles are disgorged, then recorked and dressed.
The resulting ‘OBNI’ (objet brassicole non identifié - unidentified brewery object) is not lacking in interest.
In the glass, you'll see a beautiful golden colour and a string of fine bubbles. The nose is full of floral, citrus, peach and spicy aromas. On the palate, this Gôde beer is well-balanced, with a pleasant, controlled sparkle. There are hints of spices and malt, and a slight impression of fruit - the promise of a great aperitif.
Best served in a champagne glass.
