Discover UBY's Philosophy
For over a century, the Morel family has embraced nature's inspiration, championing a human-centric, environmentally-conscious, and sustainable approach to winemaking. Representing the third generation, François Morel continues this legacy, presenting wines that are aromatic, fruit-forward, and delightful. These wines are not only known for their exceptional value but also embody a philosophy that has stood the test of time.
Crafting UBY's Wines
Elaboration of Tranquil Wines
Meticulous attention is paid to the winemaking process at Domaine UBY. Grapes are carefully harvested at night to ensure optimal maturity and protection. This is followed by skin maceration, pneumatic pressing (to prevent oxygen exposure), low-temperature fermentation, lees aging, blending, and conservation in temperature-controlled tanks. The result is wines bursting with flavors, meticulously preserved for your enjoyment.
Elaboration of Sparkling Wines
The same meticulous process used for tranquil wines is followed, with the addition of CO2 during bottling, creating effervescence that elevates the wine-drinking experience.
Since 2012, a state-of-the-art cellar has overseen the entire winemaking process, ensuring quality from vinification to packaging, maintaining traceability from the vineyard to the consumer.
Exploring UBY's Wine Range
UBY offers a diverse range of wines, often praised for being delightful, light, and fruit-forward. The UBY signature guarantees exceptional quality at an affordable price.
Each cuvée bears a visible number on the label, corresponding to a distinct blend and style:
- Sauvignon and Gros Manseng (round and aromatic)
- Chardonnay and Chenin (lively and fresh)
- Colombard and Sauvignon (vibrant and fruity)
These wines, predominantly dry whites, are best served chilled and are perfect for sipping as an aperitif or pairing with seafood, fish, white meats, or cheese.
BYO Organic Range
Dedicated to organic wine enthusiasts, BYO presents four numbered cuvées:
- Ugni blanc-Colombard-Sauvignon (fresh and fruity dry white)
- Rosé (refreshing and generous)
- Sweet white (smooth and fresh)
- Red (full-bodied and warm)
The World of UBY Armagnacs
Traditional distillation takes place in a copper still at the heart of the estate. Aged in local oak barrels, the eau de vie transforms over time, acquiring amber hues, finesse, and rich aromatics. The Ugni blanc and Folle blanche grapes, grown on sandy soils, contribute elegance, suppleness, and fruitiness to UBY's Armagnacs.
UBY and the Environment
For over two decades, the vineyard has embrace sustainable practices, certified under Controlled Reasoned Viticulture. Nearly 20% of the vineyard's surface is dedicated to organic farming (organic wines though), aligning with UBY's commitment to nature preservation.
The Tortoise Symbol: A Pledge to Nature
The tortoise emblem symbolizes UBY's dedication to an agro-environmental contract, preserving a natural habitat for the endangered European Pond Turtle. This emblem signifies the estate's unwavering commitment to environmental conservation.
Awards and Recognition
UBY wines have received numerous awards, including prestigious gold and silver medals in various competitions across France. The BYO range and UBY Armagnacs have also earned accolades, reinforcing the consistent quality upheld by Domaine UBY.
