Chablis Domaine Billaud Simon
Billed Simon is a family-run wine estate in Burgundy with 17 hectares of 50-year-old vines. This winegrowing estate is located in the heart of the greatest Chablis appellations, with vines in the grand cru appellations (les clos, les preuves, les blanchots and les preuses) as well as vines in the premier cru appellations (montée de tonnerre, fourchaume, les vaillons and mont de milieu). Billaud Simon usually harvests late to ensure that the grapes are ripe.
Mont de Milieu Chablis Premier Cru 2018
This white Burgundy wine is a 100% Chardonnay, like most of the region's wines. The special feature of the Mont de Milieu appellation is the typical clay-limestone soil. Chablis Billaud Simon premier cru is matured in stainless steel vats for around fifteen months before being transferred to oak barrels. This Chablis Premier Cru wine should be enjoyed at a temperature of 12°C with an aperitif, seafood, light cheeses or a charcuterie platter.
