This Cremant de Bourgogne Bailly Lapierre is a 100% Pinot Noir. Pinot Noir is the king grape variety of Burgundy. This grape variety gives this crémant 100% Pinot Noir from Bailly Lapierre power, depth and fruity. Manual grape harvests bring high quality grapes to the press. Fermentation takes place in vats, the foam is taken in the bottle, then the wines rest 16 to 18 months on a slat, in the caves of Bailly an underground stone quarry where the temperature and the humidity is perfect. Les Caves de Bailly Lapierre, 430 winemakers bring their grapes to the cellar. Production is based in the immense underground galleries of an old limestone quarry. Did you know ? The Bailly-Lapierre cellar invented the concept of crémant-de-bourgogne.
