Description
La Croix Dompierre is a blend of Cabernet Sauvignon (85%) and Merlot (15%) grapes, grown in two different parcels: one with gravelly soil and the other with clay-limestone soil. After manual harvesting, the grapes are destemmed and sorted. Fermentation takes place in wooden vats using indigenous yeasts. The cap of grape skins is submerged, and the maceration lasts for 5 weeks. The aging process continues for 18 months in wooden vats from Nadalié, made of fine-grain French oak.
