At this altitude, the sugar cane is of exceptional quality, the rum is then aged at 2300 meters above sea level. Oxygen is scarcer there and the process of aging by oxidation is slowed down while the exchange with the wood continues. Zacapa is a traditional ron made only from cane honey. Beyond this "altimetric" characteristic which has a real influence, Zacapa rum has become one of the best rums in the world of its kind.
