The last beer of the year was brewed with the rest of the cereals and hops of the year. This top-fermented beer was denser, richer and more concentrated than the beers of the year. Often this beer was offered as an end-of-year gift. According to the recipes these beers can be flavored with spices or citrus fruits.

The strong seasonality of the Christmas Beer denomination has led some breweries to rename these vintages "Winter Beer".
