A Garde beer is a beer kept after brewing
It is kept after brewing for a few weeks or a few months at low temperature in the tank or in the bottle. During cellaring, still active yeasts continue the fermentation phenomenon. The alcohol level rises slightly when consuming the residual sugar in the beer.
Beer to keep less sweet with more finesse
These beers are more marked by cereal notes than hoppy notes. The best-known beers for aging from the Hauts de France region are Ch'ti and Trois Monts.
