The Clément family owns the Acajou estate, an artisanal sugar factory, which will become the Clément estate and its fabulous home since 1887. It is in 1917 that a distillery will be installed on the estate. Rum Clément is an agricultural rum from Martinique. Martinique has benefited from an AOC for its rums since 1996. An agricultural rum must be exclusively made from extra fresh sugar cane juice, ideally the canes must be crushed within 12 hours of cutting. The cane juice thus obtained is called vesou. This vésou is fermented for 36 hours in order to obtain a "cane wine" which has a titre of between 5 ° and 8 °. This cane wine is then distilled in a distillation column which will give this wonderful Clément white agricultural rum from Martinique.

Did you know, Habitation Clément hosted the meeting of François Mitterrand President of the French Republic and George Bush (Father) President of the USA during a Franco-American summit in Martinique in 1991.
